Warm Beet Salad with Spinach

This beet salad is one of my current favorite INSPIRED TO HEALTH recipes.

I’ve been trying to incorporate more heart healthy beets into my diet and this is a simple and delicious way to do so!

 

INGREDIENTS:

2 large beets sautéed or steamed (chopped)
2 garlic cloves minced
1/2 cup red onion, diced
6 cups of raw spinach (washed)
2/3 cup raw walnuts (chopped)
1/2 fresh juice from an orange
1 tbsp walnut oil
1 tsp  maple syrup
1/4 cup crumbled feta cheese
Hint of Himalayan sea salt and freshly ground black pepper to taste

DIRECTIONS:

In medium size skillet heat 1 tbsp. of grape seed or coconut oil. Sauté onion (until slightly translucent) and garlic on low, adding beets in after semi soft.  Sauté mix for for approx 3 minutes on low adding walnuts. I love to first spiralize raw beets and then chop.

In separate bowl combine and mix red walnut oil (or olive/oil of your choice),  juice from orange (I like to use a wooden citrus reamer), & maple syrup. Add to spinach and toss.

Next combine warm beet mixture with a light sprinkle of feta on top.
